What You'll Need:
2 medium-large sweet potatoes
olive oil for rubbing
sea salt
4 Tbsp natural peanut butter, no sugar added
4 Tbsp hemp hearts
For serving:
4 c fruit of choice
OPTIONAL: cinnamon for toast sprinkling
Preheat oven to 400*
Pierce potatoes with a fork. Rub with olive oil & sea salt. Bake for 30-40 minutes.
Cool & store whole potatoes in the fridge. Enjoy sliced in half, smeared with nut butter & hemp hearts and a piece of fruit for mid week breakfasts.
