Rapini & Beanie

gluten free, vegetarian, soy free, nut free, egg free, one pot meal

What You’ll Need:

1 purple onion, diced

3 cloves garlic, minced

2 Tbsp Olive oil

 

1 large bunch rapini/broccoli rabe, chopped

2 c filtered water

1 c veggie stock, no sugar added *

2 tsp sea salt

black pepper to taste


1 can cannellini beans, drained & rinsed

 

3-ish ounces Parmesan cheese, shredded


Sauté onion & garlic in a shallow soup pot with olive oil until aromatic.

  Add rapini, water, broth, stock & spices to pot.  Bring to a boil. Lower to a simmer & cover. 

 Cook for 15-20 minutes, just enough time for the flavors to marry. Stir in beans.

 If desired, Top with shredded parmesan!

 

Serves 2.
